The waygu fat is not like prime fat it will start to melt from your body heat in your hands. Made a bunch of fat drippings. I just used S&P and put it in a dry hot cast iron. I saved the drippings in the pan to make eggs in the morning with as well.

JV Foods in Kenner (find them on Facebook) sells to the public by appt. only. They have Louisiana Wagyu which i think is Snake River Farms. I got a 5lb tenderloin for $30/lb but havent cooked it yet.

Lately I have been grinding whole briskets for my ground meat needs. It used to be cheaper but it also gives me some extra fat to use. I render some for smoking briskets or cooking and the rest I save to grind with leaner meats.

Not sure about Prattville or Montgomery, but I’d think between there and Auburn, someone would have it.
In Bham, NY Butcher Shop has it as does Piggly Wiggly. The Pig carries Snake River Farms. Not sure what NY carries, but it is significantly better and priced accordingly.

For beef, try Kansas' Creekstone Farms if you want the best. It's where Franklins gets their beef.

I think you meant all cuts in wagyu.
Snake River Farms pops up on google for this. In stock sizes for wagyu brisket starts at $149 for a 12-14lb brisket. That's a little cheaper than Kansas Creekstone Farms.

1.5" is fine. The thicker cut gives you a little more play in regards to hitting your desired temps. Try to get there around lunch time if you can. Their sandwiches are unreal.

We own a business just down the way from Jim at NY Butcher. Great guy and quality stuff. Sorry you had to drive all the way to Bham just to get it. Hope we haven't overhyped it.

I'm going to reverse sear those bad-boy steaks tonight. Pellet grill at 220 till they are 120, then slap them on the Egg for searing and the crust. Whatcha think?

I know you will but make sure you post a pic of it. I was wondering how their A5 looks. I almost got one but went the route I did to make sure it was as good as it gets.
Also idk if you changed your mind but its going to come frozen "I think"

I will. The description says it will be frozen. After researching, I understand it's ok to thaw and refreeze. Crossing my fingers it doesn't hurt the quality of the meat.
