my favorites are: onions, garlic, brussel sprouts, and mushrooms. I'd be curious as to how okra and broccoli would come out.
Honestly, they might be better than the crawfish considering the difference in labor needed to peel and eat them

Quarter the boiled potatoes, batter with Louisiana Fish Fry (yellow bag) and deep fry until golden. Amazing.

Mushrooms are my main non-traditional veggie add-in. I'll usually go with corn, potatoes, onions, garlic, and mushrooms.

Not a vegetable but cut up some large pineapple chunks and throw them in with the crawfish.....great if you like the spicy sweet combo

Thanks, y’all. The asparagus, sprouts, and okra turned out the best. The beans didn’t hold any spice and the broccoli held too much. I used a netted bag and tested them periodically. Pulled them when they were soft enough.

Cabbage, cut the head in half so that the stem holds it all together. Put in with the crawfish. Will really soak up the seasoning!!
