I have to have beer with crawfish. It’s the perfect pairing.

Beer, particularly bland light beer, is paired with crawfish for a very important reason: to lessen the severity of the spices in the boil. When one eats spicy food, sodas and water both can amplify the heat. On the other hand, milk, beer, and bread are all common remedies to soak up spice and alleviate the pain of eating something that’s too spicy for someone. Milk spoils quickly outdoors (crawfish boils tend to be outdoors in warm weather), and boils already have potatoes and corn as starches, so there is little reason to eat bread. As such, beer, particularly cold light beer, is the perfect beverage to help balance the heavy spices of the seafood boil.

Boiled seafood is the one meal I will only eat with a beer.
