Unique Fish Recipes

I sometimes grow tired of eating over and over fried fish, redfish on the halfshell etc..., but hate wasting fresh fish from a good fishing trip.
Does anyone have any fish recipes that you would consider unique or outside of the box?

I don't have any good recipes to offer, but papillote would be out of the box no?

Yes, take a redfish on the half shell and drizzle with olive oil, garlic, and season to taste. Place on hot grill skin down obviously. As they start to turn white and curl a little on the edges add a mixture of parmesan, romano, mozzarela or really any cheeses combo you like. Once it melts take them off and enjoy. Talk about good.
With trout coat the filets in spicy mustard and then place in egg wash. Then coat with italian bread crumbs and place on a medium heat skillet with olive oil. Put enough oil in the pain to cover the bottom to about a 1/4 inch deep that covers half the filet. Filets will cook quickly so I usually turn after 2-3 min on each side depending on thickness of the filets. You can eat as is or I sometime pour a cream sauce with lump crabmeat of crawfish/shrimp combo on top. Delicious.

Im making ceviche tonight with some fresh fish. Not really unique or outside the box, but diff than norm way I cook them.

Fish hash.
Pan fry fish with cubed potatoes.
Serve over rice with side of pickles, sliced raw onions, and either mayo or soy sauce.
Save fish heads and make fishhead soup.

Curried Fish Tacos
Cuisine: Indian Fusion
Serves: 2-4
INGREDIENTS
2 pieces (500 grams) white fish fillet
Salt and pepper
2 tablespoons cornstarch
1 teaspoon mixed curry powder (I used Garam Masala and Madras, ratio 1:1)
1 small (150 grams) carrot, shredded
1/4 small (100 grams) cabbage, shredded
1/4 cup chopped cilantro
2 and 1/3 tablespoons olive oil
5 (8-inch) flour tortillas
5 teaspoons mayonnaise
Lime wedges
INSTRUCTIONS
Dry fish fillets thoroughly with a paper towel. Grind salt generously onto both sides of it and gently pat by hand. Set aside and let sit for 5 to 10 minutes.
Prepare and cut carrot and cabbage. Combine them with cilantro in a large bowl.

Sprinkle curry powder evenly on both sides of each fillet. Gently rub by hand to evenly coat the fish.
Sprinkle cornstarch on both sides of the fillet and rub by hand, until the fillet is evenly coated. Cut fillet into large pieces.

Add 1 tablespoon oil to a nonstick skillet and swirl to spread the oil. Heat over medium high heat until warm. Place fish pieces into skillet without overlapping them (you might need to cook fish in several batches depending on the size of your skillet). Grill and cook without moving for 1 minute. Continue to cook until the bottom turns golden brown, about 2 minutes. Flip to cook the other side until golden brown, about 2 minutes. The cooking time will vary depending on the thickness and type of fish. If the fish is not cooked through yet, turn to medium or medium low heat, cover and cook until fish is cooked through. Cook the rest of the fish in same method. Transfer the cooked fish to a plate to cool off.
Heat a clean nonstick skillet over medium heat. Grill tortilla, one side at a time, until both sides are lightly browned. Transfer to a plate.
(Option 1) To make cabbage and carrot slaw - Add a pinch of salt and pepper, 1 teaspoon olive oil, and 1 teaspoon of lime juice to the bowl with the cabbage, carrot, and cilantro. Toss to mix well.
(Option 2) Use raw cabbage and carrot without making the slaw. (*see footnote)
To assemble tacos. Place one or two pieces of fish on a tortilla, top with cabbage carrot slaw (or shredded cabbage and carrot), and add 1 teaspoon mayonnaise.

To serve the tacos at a party, prepare the fish and cabbage carrot slaw (or shredded cabbage and carrot) ahead of time and store them in the fridge. Grill the fish and tortillas on the stovetop before assembling.

Make an imitation crab meat using Sheepshead, black drum or redfish meat.
Boil the filets with crab boil and salt until it wants to come apart. Some people put the meat in a cheese cloth bag,once done put on ice to chill. Once cold, remove from ice and flake with a fork. Use it just like crab meat in casseroles etc.

My dad and his homies get together at Christmas time and cook Croatian Bakalar. It's originally a salted cod and potato soup, but since they're lazy and purging salted cod takes forever, they've substituted with frozen pollack most of the time. I'm not sure if any of them have ever tried substituting a Gulf fish in there, even though they're more available here. It's definitely an acquired taste.

Tuna tarts- small 4" pie shell, fill with tuna chunks, ranch dressing and top with bacon bits. Only cook until tuna is warm.
Fried rare tuna- cube tuna, put in the freezer until the chucks are semi frozen, fry and enjoy raw fried tuna. Be careful when throwing the chunks into the grease.

Season redfish filets (Creole season) and set aside.
Then saute Onions, Bellpepper, Garlic in Olive oil, until wilted and clear.
Add Tomato sauce and sliced whole garlic. Cook sauce on medium for approx. one hour. Add redfish filets and cook for another 1/2 hour.
Serve with warm buttered French bred.
Feed the hungry masses.
Listen to their squeals of glee as the feast is consumed.

Season & sear the fish. Here I used a spice blend that included coriander seed, white pepper, & cardamom.
Next I removed the fish to sweat some onions then I added capers & caper leaves and deglazed with white wine & lemon juice. The fish go back in & butter is mounted for a luxurious flavor & texture.
My wife wanted chopped tomatoes so I obliged. Fresh basil to garnish.
Buon appetito!

I went on a charter trip once and brought back a bunch of snapper and AJ. I asked the captain how he cooks his fish. He told me to get a can of Cavendar's Greek Seasoning....
Here's a couple of different preparations you can do with it that are really delicious:
On the Half Shell, Parmesan Crusted:
Make score marks in the fillets. Mix together some Olive Oil with Garlic, Red Pepper Flakes and a little lemon juice. Brush your filets liberally. Sprinkle very generously with Cavendar's and Parmesan Cheese. Grill over med heat until it starts to pull away from the skin. Important to not baste while it's cooking and the cheese/spice makes a really nice crust on the top. This is great on snapper, redfish, you can do with Trout, but scale the filets and cook in an aluminum pan.
Pan fried: mix a very generous amount of Cavendar's with Italian Bread Crumbs. In a non stick skillet, add a few tablespoons of butter and olive oil. Heat to Med/High heat. Once skillet is nice and hot, cook the fish for a few minutes on each side until cooked through. Do this in batches to not overcrowd the skillet. Wipe out the skillet and put fresh oil and butter for each batch. If doing several batches, you can put on a wire rack on a sheet pan in the oven on low heat to keep warm.
