1) Redfish half shells - Coat flesh side with 1/2" chopped green onions and press down into a large hot greased frying pan for several minutes before cooking on the grill.
2) Poached red fish - simmering in seasoned water with spices/herbs make a great flavor and I like the texture.
3) Trout almondine is a favorite but it takes a while to do it right.
4) Smoked salmon - We eat some fillets and make a smoked salmon salad (like tuna fish salad) that every one likes.

Redfish Grill Courtbouillion
I make this a lot and I like it because it is thinner than most. Any firm fish. And if you don't have the fish stock use chicken stock. Works very well.
