Types of Salmon

So this thread got out of whack so I decided to start a new thread. LINK
Should I be looking specifically for Alaskan and not Atlantic? We picked up a Steelhead fillet from Costco the other day that was pretty good. Then I researched and realized it's actually a trout.
Should I be looking in the frozen section or stick with the fresh section? In the frozen section they had a pack of Keta Salmon.

I prefer Alaskan to Atlantic. I usually get King(chinook) and Coho. Sockeye is good too. Chum(Keta) isn’t bad, but I prefer the others.

You might have some luck at a place like Whole Foods. They usually have a couple of fresh varieties.

I like Alaskan. I sometimes find frozen to taste fresher than fresh. That stuff is usually frozen pretty quickly after being caught.

ETA: Agree, WholeFoods does have some good fresh. Just go look at it, give it a smell.

ETA2: The best salmon I have ever had was when I went to Oregon, fished the McKenzie river and caught Chinook Salmon. 4 of us went, caught 8. Ate like kings the week were up there. Had salmon so many ways. Wives loved it too.

This.

Generally when it's in season you might be able to get it fresh on the east coast, but out of season it's going to be previously frozen anyway so might as well buy it frozen up front.

My preference in order:

Sockeye
Chinook/King
Coho
Scottish Atlantic (wild caught)
Keta/Chum
.
.
.
.
.
.
.
.
.
.
.
.
.
.
.
Farm raised Atlantic. If I have to and I can cover it in some sort of sauce.

The fresh stuff is typically either farm raised atlantic salmon or previously frozen. I just buy frozen filets.

But it is an anadromous trout so its life cycle is akin to salmon in that in spawns in rivers but grows up in saltwater. While technically it is the same species as rainbow trout, its flesh and taste is salmon.

Where do you find this? My understanding is all wild atlantic salmon are an endangered species and commercial fishing for them is verboten.

You can find fresh wild Alaskan online, when it’s in season. Some websites will notify you when it’s available or you can pre-order. You’ll pay a bit more for wild fresh.. Or you can buy wild frozen at any time during the year..
Vital Choice is a good source for frozen wild.

Fresh Market always has really good fish.

Commercial salmon season in the Pacific (Alaska) is basically the summertime. If it’s not summer, I’m not sure what “fresh” salmon means... it’s all likely frozen at some point.

Atlantic salmon is all farm raised, and is a non-starter for me.

My favorite species for eating:

1 - King/Chinook
2 - Silver/Coho
3 - Red/Sockeye

Don’t even bother with the rest.

It's actually in the salmonid family.

King
Silver
Sockeye

If frozen:
Sockeye
Silver
King

Chum/dog salmon is surprisingly good as well.

What time of year was it? McKenzie doesn't really get a fall run so I'd imagine you caught and ate Springers (Spring Salmon). They arrive in Feb to may and have to survive to spawn til fall.

Springers are our best tasting salmon in the NW due to the amount of fat they have.

Counting AK, WA, and OR fresh fish is caught from May til Oct.

I'd never seen a chum til last year. Fun as hell to catch as they are truly wild with no hatchery program for them. Locally at least.

I gave mine away. I'm not a big salmon fan and I've read most people smoke them so I couldn't get myself to try it

Just kept the eggs for steelhead candy.

Yeah, “basically summer”.

I worked in the industry for 2 summers.
