Two-day Smoked Duck and Andouille Gumbo

Ive been wanting to do this for a while and finally got around to it. I have learned that not too many people, and none of my family, like duck gumbo.

Started Saturday with these three woodies that I killed back in November.


I smoked them for 3-4 hours with hickory chips


I then deboned the ducks, roasted the bones and carcasses, and made stock with them.





I started making the gumbo today(day two).

Went for a pretty dark roux here, and then cooked the veggies for 45 mins or so



For all you heathens out there, the potato salad goes IN the bowl.

Looks good. Leave the skin on next time and cut your smoke time in half

Looks awesome. Was the duck pretty dry or tough? I can never seem to get wild duck right in gumbo.

I cooked the duck for an hour and a half once added to the gumbo, so it became fairly tender and not dry. I was worried about that though.

You only need to smoke them an hour or so. Internal 130, tops. Debone, roast the bones like OP did, then add the duck back after the gumbo is made and simmer just a bit.

Damn that made me hungry. Love duck in gumbo, pot roasted, bacon wrapped breast....any way you fix it.

I love duck & andouille gumbo, and that looks delicious.

Also, while I'm typically a land animal only or aquatic animal only guy with my gumbos and jambalayas, duck & oyster gumbo is pretty damn tasty as well.

That looks fantastic.

And I agree on the potato salad. I never make gumbo without it.
