Bought one from Costco. It’s pretty thin. How should I cook it?

I like putting it in a fajita marinade and then slow cooking in a Dutch oven. Can make tacos, enchiladas, tamales

Rub with garlic powder and Tony Cachere.
Heat iron skillet with butter
Sear
Finish in oven at 350 ish

This was a Waygu Tri-Tip that I cooked this weekend. My butcher has then regularly and I’ve tried them a bunch of different ways. The best is to smoke it at 200-225 until and internal temp of 110-115. Then sear it for a minute or so per side. It is a truly undervalued cut of beef and is great as a stand alone steak as this one was or as the best fajita meat you’ve ever had.

Just a simple oven reverse sear at 205 degrees with an internal temp of 125...
