Too many left over crawfish

Last time I boiled some mud bugs at the house for the family I had a ton left over. I ate my usual 2 pounds, but neither of my sons like spicy food and my wife only eats a couple of pounds as well.
What do you do either your leftover crawfish?

Just peel and freeze the tails. Put into smaller batches for easy meal like a crawfish omelet on a Sunday morning.

I have gotten better at budgeting for the group that I am cooking for...it sucks when it is late and you are tired and you have 25 pound to peel ...but at least I get etouffee out of it...

Ingredients
4 cups rough chopped, leftover seafood-boiled, red-skinned potatoes
1 cup real mayonnaise
1 tablespoon Creole or other spicy mustard, or to taste
1/4 teaspoon Creole or Cajun seasoning, plus more for garnish
1/2 cup chopped onion
1/4 cup chopped celery
3 large boiled eggs, peeled and chopped
2 cups leftover cooked and picked seafood (shrimp, crabmeat and/or crawfish tails)
Salt and pepper, only as needed, to taste
Paprika, to garnish, optional
Instructions
Heat leftover potatoes in the microwave just to warm through.
Mix together the mayonnaise, mustard, and Creole or Cajun seasoning. Add to potatoes while warm and toss
Add onion, celery, eggs and seafood to potatoes and gently toss, adding additional mayonnaise as needed for desired creaminess.
Taste and add salt and pepper, only as needed.
Cover and refrigerate for several hours or overnight, to allow flavors to develop. Keep refrigerated.
Just before serving, sprinkle the top very lightly with additional Cajun or Creole seasoning (or paprika) for garnish, if desired.

Man 100% agree. Not too bad during baseball season though you can peel and watch the late games at least!

And I've never heard the phrase "Too many crawfish left over". That is foreign to my nature.

Late spring crawfish coincide with dirt cheap fresh corn. Make a large batch of macque choux with crawfish. It freezes well.
