The worst video I’ve ever seen for poultry safety. Very cringeworthy

I’m smoking four breast this week, and just looking at all the different ways people do it.
I came across this guy. I would not eat anything he cooks. His food safety is horrible.

Biggest issue is he stuck the injector in the bottle the first time to get the liquid, did a piss poor job of injecting it and then puts the injector BACK in the bottle for more liquid, thus contaminating the entire bottle.

Only a problem if we are to assume he's planning on keeping the bottle for later use instead of throwing it out after being done with the video. Which is what most creators do with one-shot videos.

You don't know about sanitizer to clean after?

Do you not wipe down everything at your house?

And you must be one nasty cook. If you use food handling safety, you don’t have to sanitize your entire kitchen when you are done.
I would have taken the glove off before handling the can of rub.
I pour the Tony’s injection into a bowl before using.
I am very aware of food handling safety.

When I do chicken or turkey, I stay in one area, have everything ready, including the sink running to wash my hands. So when I’m done, I have just a small area to sanitize, not the entire kitchen as you claim.

The guy addressed contamination in the comments that the bottle and stuff was a one time use so it didn't matter.

He's showing people how to do this at home and most home cooks are not going to toss out a bottle of injection liquid if they only use about 1/4 of the bottle.

If he would have poured some out in a container to draw into the injector and then tossed what he didn't use, then no problem.

Point is, if showing your so-called cooking skills, do it right.

I am certified in food handling safety.

The food was handled safely. We can't assume that the clean up was not, but nothing he did in that video was egregiously unsafe.

Good for you.

Pretty much every commercial kitchen does this. We sanitize the entire work area and also kitchen after use. We have sani-bucket to wipe every thing after use.

What you see on TV are not kitchens, they are sound stages and everything you described as what you do is not considered optimal.

While true that this is a textbook example of cross-contamination, that injection marinade is a 15-20% salt solution. The pathogens associated with food-borne illness from consuming undercooked poultry can be destroyed or reduced to a safe level with a 5% salt solution.

I agree that it's a bad practice however, the probability of bacteria surviving and multiplying in the bottle is pretty slim.

Not only that, injection is used in tandem with heat. Nobody uses injection as a dipping sauce. The salt will stop the growth and the heat will kill all remaining bad bacteria.
