Once ate at Big Bob Gibson's BBQ in Decatur, AL. Ask'em what are they known for?

Full disclosure, never been to the one in Mississippi. But, the one in Destin was absolute trash. Ribs were mushy, slathered in sauce, pulled pork was mushy. Went there a couple of times thinking it had to be better, nope, awful every time. Not surprised it closed.

Different cooks, no servers, no lines, no sides to prepare, no management, no overhead (by comparison), etc. etc.
I'm not doubting that the restaurant is not good, but Saskwatch is right on point.

Yes, highest quality meets. Way more attention to detail. They are cooking for a finite judging pannel. At a restaurant you have to cook for a days worth of customers. In BBQ timing is everything and they have enough time to put out a singular great product

If Rudy’s, Pappas BBQ and Spring Creek BBQ can make it in Houston then just about anything else can as well including Arby’s.
