Taking jambalaya to India

It's a 26 hour trip between flights and layover. Can I freeze it and take it in my check-in? Or just take the mix and try to recreate a recipe.

I can't imagine the will let you take prepared, frozen food like that on an intercontinental trip. Even so, with the state of air travel these days, your risk of delays is high, as would be thawed food along the way. Take a mix and make it fresh at your destination.

You need to do this
You need to make the jambalaya in the states. Freeze it. Carry it onto a 26 hr flight. This is the way to go

Full disclaimer, I have never made jambalaya. Was planning to order some to give my folks ideas of how it tastes but I guess they will have to suffer whatever I can cook up... Lol

Why not just get a premade box, especially if you’ve never made it? Oak Grove, Tony Chachere’s, Zatarain’s, etc., and source your chicken, pork or sausage there.

Pack the box mix. you could vacuum seal + Freeze + check ice chest with dry ice for whatever items aren't accessible in India. I would think pork and smoked sausage may be hard to come by there?
Not sure what regulations are like for Intl. travel. I know people pack meat like this after fishing in Alaska.

Restrictions regarding meat and poultry may prevent your jambalaya from passing through Customs.

You can still make it with chicken and it would be good IMO. It wouldn't be as good without pork and sausage, but good enough for your purposes.
Why don't you try a test run first, making some in Baton Rouge with meat / ingredients that you expect to be available in India? If it turns out good, just do that in India. If not good, try to tweak the recipe. But if you are just using a box mix, it should be fine.

Just curious. Is jambalaya something you like and you want them to see that you are getting good food here?

You should definitely not try to take a large amount of frozen, prepared food on the plane/through customs.
