T-Day, my biggest party of the year

I'm expecting 30 folks to come for T-Day this year----up from 25 last year with 5 from out of town dropping in and staying 3 days with the wife and I.

The menu is as follows and I'll start preparing most of it starting Tuesday.

Frying four 13 lb. birds
Large pan of mac & cheese
Large pan of eggplant/shrimp/cheese casserole
Large pan of cornbread dressing with my homemade green onion sausage
Roasted garlic mashed potatoes
Giblet gravy
Chicken/andouille gumbo and rice
Assorted cheese tray
Philly Cream Cheese with my homemade pepper jelly and crackers
Fruit tray
Various pies
Homemade loaves of herb bread

Beer, Wine, spirits with setups

If anyone walks away hungry, it's on them.

I just want to say that I also love Thanksgiving feast. It's gonna be a good week.

Before my father-in-law died 8 years ago now, we'd all get together at his house in Mansura and I'd get there on Tuesday with a whole sack of oysters----when oysters came in 100 lb. sacks. I'd get to spend some quiet time with the old man before people started trickling in on Wednesday afternoon.

By Thursday we'd have 25-30 people coming for the big meal with many of them hanging around for the weekend. On Friday I'd make a huge pot of gumbo with rice and potato salad and on Saturday we'd roast a whole hog and try to knock out all the casseroles from T-Day.

That was a great time, but a hell of a lot of eating over that 3 day period.

I'm going to some friends' house, and will be bringing my grandmother's cornbread, collards and andouille sausage stuffing. She raised me and passed many years ago, but I've made that stuffing every year at Thanksgiving. I still have the recipe written in her handwriting on an index card and think of her every time I make it.

We take turns making different dishes, varying a bit from year to year. Some years, we have shrimp & mirliton, sometimes it’s cornbread dressing or rice dressing. I try to shoehorn an veggie side to keep us from expiring in a collective carb coma. This year, my assignment is to make a chocolate malted cheesecake. Also on the menu: chicken gumbo, turkey, cornbread dressing, ham, sweet potatoes, squash.....and usually a couple of random other things someone decides to make at the last minute. I might roast some cauliflower, too.

Yeah, especially at night when we'd sit around the big round table on his screened in back deck and play Bourre or Farkle and drink shots of Tequila and go through 2 or more bottles of it after drinking ice cold beer all day.

Got two stocks going. Crockpot chicken stock and a stovetop smoked turkey.

We don’t host, but everyone contributes.

I’m doing a recipe I got from a Vermillion Parish lady for cheesy cabbage casserole.

Then some Ruth’s Chris recipes (crab cakes, sweet potato casserole, and remoulade sauce).

Boiling shrimp to go with the remoulade, and will also do cocktail sauce.

Normally I'd be doing most of the cooking, though now that I've sucessfully adopted Keto as my way of eating I'll probably be seated outside LOL My contributions are going to be a bit different and someone else is going to need to do the carb-heavy sides.

Fried Turkey-Smoked Ham-Char Grilled Oysters-Grilled Jacobs Andouille-BBQ Shrimp-Seafood Gumbo(smothered okra/file for thickening instead of flour roux)

What??? No creamed spinach??? Just kidding, they all sound good------but their Creamed Spinach side is delicious.
