Very true, which is why my preference is to go for 8:00. It's late enough to where there is no wait and the place is about half full.

I've been eating sashimi (sushi) since 1982 when Shogun opened in Metairie. For over 3 decades now I've heard the SOS: "That stuff is gross ... who eats raw fish ... it's just a fad ... that stuff is bait ... sushi will never make it in South LA .... do they serve cooked food? " ... and so on.

As long as Japanese restaurants are serving a fresh quality food product, and people have no problem paying the current market price, sushi restaurants aren't going anywhere. The finer dining establishments will survive, whereas the poorly run, lesser quality establishments will eventually go out of business. Personally if given the choice to eat at Yama/Umami or Ruth's/Sullivan's, I'm eating fish 4/5 times.

The whole aji at Umami is better than anything I've had at Sushi Yama.

I've only done Masa at lunch but I find it to be really good for what you're paying for. 16ish bucks at lunch and I can get some various rolls and regular sushi seems hard to beat. The fish has always tasted fresh to me as well.

It gets loud in there during peak time. That's my only real gripe and the GF and I combated that by going later in the evening when we crave Yama

They have a very large group of regulars who have become close with the staff/owners, so they often all come in with their kids and it's a big get-together. They're all nice people, but last time I was in there for one of their birthdays and the entire restaurant was basically their party, I immediately wondered what the other patrons were thinking with these kids running around and people standing around drinking.
