Suggested Sides for Leg of Lamb

Doing a boneless leg of lamb for Easter Sunday ... need suggestions for sides. I've roasted leg of lamb before, but I always just carved it on a cutting board with pitas, lettuce, tomatoes, onions, and tzaziki put out for everyone to just get down on their own.

This will be a sit-down Easter dinner though. I need suggestions for sides. All I can think of off the top of my head are some roasted rosemary potatoes.

Any other suggestions/ideas? Thanks in advance.

Not a side, but maybe some mint jelly to go with the lamb.

Hummus

I'd be happy with those sides with a leg of lamb

Put some halved red potatoes, mixed with rosemary and garlic, underneath the leg of lamb to roast for about an hour/until for tender. Toss them in the fat that drops off the lamb and serve.

Was coming here to suggest this. Also if you have a deputy a nice risotto with some favs beans and mint folded in would be really nice.

Lamb loves anything herbaceous so baste that leg with some rosemary, thyme, etc… made into a bouquet and dipped into olive oil.

I do a version of Twice Baked Potatoes that people seem to like very much.

Deceptive name since I only bake them once.

Peel and cut up potatoes like you are making potato salad and boil until near fork tender. They can be a bit firm since they will be baked once all the other ingredients are added.

Additional ingredients:

Diced onion
Diced celery
Minced garlic
Chopped green onions
Chopped Parsley
Sliced mushrooms
Sour Cream
Butter
Cheese
Fried bacon bits
Salt and Pepper to taste

Saute the onion and celery for a few minutes in butter, add the garlic, green onions, mushrooms and parsley and cook until all is blended and wilted.

In a separate pan, cut up strips of bacon and fry until done to have bacon bits.

When potatoes are done, drain and use a potato masher and mash them just enough to break them up a bit with some mashed and some in small chunks. Then add the vegetable mixture, bacon bits, sour cream and cheese and mix well. Check for seasoning and add salt and pepper to taste.


Butter a casserole dish and put the potato mix in it, cover with additional cheese and bake in a preheated oven to 350 degrees until the cheese lightly browns.

I didn't give any amounts of ingredients to use since it really is determined by how much you plan to make.

Simple. Don't take away from the lamb.
