That coconut pie looks awesome.
I had a few ideas for this but ran out of time. End of year is crazy at work and our weekends are full all the way to Christmas.

since I shopped for lump crab meat the last few days, I can attest that you have $43 worth of crab meat on top of those pies

quote:is that what was so expensive? Hell I figured it was the crawfish. When it comes to these challenges I typically don’t even look at prices, I have something in mind and I just go with it

smoked softshell crab pie & lemon meringue pie
smoked some softshell crabs over cherry wood. Darn near impossible to find them now as I found 1 medium with appendages and the others had none when I bought them from the fish market
Cold smoked the crabs for 20-25 minutes. I video'd the smoker but can't get video to upload
Since the crabs were 50% cooked, I finished them in a butter with herbs, lemon wedge, garlic, and shallots
then made a lemon cream sauce with bacon , butter, and heavy whipping cream
stuffed it in a pie crust and baked it on 375 under done
side was asparagus, thick bacon, and a hollandaise sauce that didn't thicken
lemon meringue pie: 4 eggs, 4 lemons, can of condensed milk

Believe me, I was thinking it would be unfair to you if I posted two! Now could you do that in the voting thread?

Do you have a recipe with portions for this? Never made anything like that before, but would like to try.
Thanks,
Thanks,

It’s complicated because I made way more of the eggplant and meat mixture than was used in the pie/tart. The rest I used for eggplant dressing for my husband, and some in the freezer for future eggplant dressing.
Also, because I was trying to keep it low carb, I made fathead dough for the crust, which is made of almond flour, mozzarella cheese, an egg, and cream cheese. If carbs aren’t an issue, other pie crust would be good.
I’ll come back later and add in details, okay?
