Everyone seems to be getting on the injecting brisket train.
I know. I almost decided against injecting but figured what the hell, it can only help right? I've watched all of the BBQ Pitmaster shows and all those guys inject so I went with it.

Interesting, thanks. That must be the Texas equivalent of the "should you purge your crawfish debate?"

A couple of days later I took what was left and chopped it up and made brisket nachos. Holy shite man.

Maybe I have shitty reading comprehension. It's Monday.

My fault for the confusion. When I said I took the brisket out, I should have added "icebox". I seasoned it right before I put it on the smoker.

I wasn't the one confused, despite the trash talk from the old man

I know.
Like you said though...it's all good.
Thanks Cap.
Thanks Cap.

Great job on the cook. The only thing I would suggest is get the highest grade you can afford. Costco had USDA Prime for $3.29 per pound for packer trimmed. It is well worth the extra money. Also, you get the chance to create meat nirvana with the point. Good burnt ends are almost a religious experience.

I don't know how that brisket tasted but the it couldn't look any better. A proper brisket is hard to beat.

OP said this was a trial run and didn't want to waste the cash on a messed up brisket on the first try.
I'm sure he will next time.

Im going to try this next time. I've become less intrigued by smoking on my rig (BGE) over time. Still love it for all sorts of uses, but as a smoker it just isnt ideal. Too much heat on bottom of meat, too small a surface area to do a large cook, and not enough heat wrapping evenly around the meat. But putting fat side down may help shield it.

Luckily I'm only a couple hours from KC, and burnt ends are pretty much on every menu here.
It's hard to find just a flat around here that hasn't been trimmed all to hell (plus some of the prices per pound are outrageous for just the flat), and I love burnt ends anyway, so packer cuts are the way to go.
That being said, that looks like an extremely solid effort. Nicely done.

Looks great. I always encourage people to try a flat first for the same reasons you did. I also agree that a well built offset is unbeatable.
I have cooked with the fat cap up and down and have not been able to really tell a difference. Old timers think you don't know what the he'll you are doing when they see the cap down. I think the amount of fat you left on is perfect, I try to serve it like your picture and let people who don't like the fat trim the 1/4" off themselves.

I use my BGE all the time on brisket with a waterpan,,,,,comes out perfectly and after just reading Aaron's: Franklin Barbecue A Meat-Smoking Manifesto
LINK
He says pretty definitively "Fat cap up not down" He also says though some people do inject, it isn't necessary.
Best tip I got from book......Let the brisket cool to between 140-145 before you slice into it for maximum tenderness, juiciness & flavor.
OP your brisket looks great IWEI

Thanks for the link, I'll have to check it out. Like another poster said, the fat cap orientation is texas' version of purging crawfish.

That smoke ring is text book! Great job!

Thx man.
And Kosmo is correct...I chose choice because while it isn't prime, it's better than select and for my first try, I think I picked the perfect size/grade to learn on. Cost isn't an issue. The next cook will be a prime full packer so I can make the burnt ends.
Or maybe wagyu.
