His remulade I saw him make on that Great Chefs show was a red remulade.

ETA, Although, I just pulled it up and that’s basically it. The two tbs of paprika do it. I thought he had ketchup, but nope.

Someone have the recipe for BR Sensation Salad dressing that everyone uses?

I'll give $20 for the legit Albasha dressing.

Never bought corn oil in my life.

That avocado dressing looks delicous though.

I don't think he invented it. I thought his contribution was that he made it shelf-stable for Seven Seas.

He did concoct the Popeyes red beans and rice recipe, though.

I think MSM is probably a typo. It's probably MSG.

Catsup with that? Must be Hunt’s people.

And yeah, I’d bet MSM means MSG unless someone can provide a better explanation. My mom used to keep a little container of Accent in the cupboard. The fact that the recipe calls for just 1/8 tsp I think supports that assumption.

Oh, and who has a 1/8 tsp measure? Just say a “pinch.”

1/8 teaspoon is probably used to scale up the batch. He probably had a recipe for a large batch with cups, tablespoons, etc. and he scaled it down for home use. You keep the 1/8 teaspoon measurement in there so you can scale it up if needed.

Ketchup or Catsup? Good ol CFR 21 155.194 will tell you. One of the many CFRs I had to know in college and still remember. The name changed from catsup to ketchup with the controversy of sodium benzoate and those who used it as a preservative and those who did not.

LeRuth’s family is still in the business. They were conducting a wine tasting last week at Martin’s in Metairie and will be putting on a dinner there featuring LeRuth’s recipes including his oyster and artichoke soup. Date has not been set yet.

Think they are all about the same.

Think Sammy's just uses a bunch of green onions in there as well.
