Smoked Leg Quarters

I have a bunch if smoked leg quarters. I smoked 25lbs this time I eat a bunch and give some away. Whatever’s left I vacuum seal. What can I make with them. Heard of a smoked chicken spaghetti, but never made. Any recs

I make a chicken and sausage spaghetti in my version of a pink sauce (mix of marinara and alfredo) that goes really well with the smoke flavor.

Chicken salad sandwiches are pretty darn good if the chicken was smoked.

I smoked 10 lbs today for a gumbo tomorrow and chicken salad.
Other ideas are chicken pot pie, chicken noodle soup, chicken enchiladas, put it on top salads. I've added it to some curry recipes too

I've recently smoked a batch and have been lunching on chicken burritos.
What's your target temp on quarters? Of course, the meat is safe at 165 degrees, but I find the texture better if I take it up to 188+.

I have done fried smoked chicken and it came out great. I only smoked the chicken to about 125° and finished in the fryer though. Not sure how it would come out if the chicken is already fully cooked.

Anybody ever made smoked chicken and dumplings? I was having a similar conversation this weekend.

I put some smoked chicken in my dumplings when I attempted to make it for the first time a couple of weeks ago. It wasn’t that noticeable to me, but, to be fair, I picked a pretty crappy C&D recipe to begin with.

I used leg quarters in a curry tonight. Came out great.
