Your curry looks great. Do you have a recipe? Is there eggplant in that or is that mushroom?

smoked chicken stew. I remove the skin and excess fat and fry it down in a pan. I then add flour and make a roux with the drippings. Meanwhile, I boil the bones and make a stock.Add onions and bell pepper to Roux and cook down. Finally add your stock and chicken and let it simmer on low till it gets soft. Can also add boiled eggs and or potatoes..C'est bon

I ran out of bell pepper so I used some poblano peppers. That's the dark pieces you see in there.

Not a complex recipe and easy to cook.

Brown meat
Cook down onions and peppers until onions are translucent, add in garlic.
Move vegetables to the side and brown your curry paste
Mix
Add in Coconut Milk
Add fish sauce and rice vinegar
Add any other aromatics (lemon grass, ginger, lime leaves)
Simmer until ready to eat.
