Either peel large potatoes or use new potatoes whole and unpeeled, sprinkle them with olive oil and top with salt or seasoning of your choice, black pepper, garlic powder, some oregano, sweet basil and parsley flakes and bake in an oven for about 1 hour at 350 degrees or until tender.
I had this last night with smoked baby back ribs and it was excellent.

Oven roasted or cheesy mornay potatoes are always a favorite with of mine with a tomato, sweet onion, and cucumber salad with French, bleu cheese, ranch, vinaigrette, or whatever dressing that you like.

I read an article awhile back that said for the perfect baked potato the internal temperature should be 205F.
Been doing it that way ever since

Baked potatoes are not rocket science. Bake it till tender and you can slide a knife into the potato easily if baking whole.
When I bake a whole potato I first wash it, dry it and coat it with a bit of butter and wrap it in foil to bake. When I stick a knife into the potato and it goes in clean and smooth, it's done.

I just discovered Hasselback potatoes a couple of weeks ago. Very easy to do and come out pretty good. I have been using Yukon Gold potatoes and they have a great texture. Crisp chip like on the top 1/2 and soft baked potato on the bottom.
I used the recipe from here.
