Share your smothered cabbage recipe

Wife and I have committed to this dish for New Years. Looking for some a recommended recipe

- fry some bacon bits
- add cabbage
- splash of vinegar
- salt and pepper

Cook for about 15 minutes

Very simple and one of my favorite dishes

Mine is about as basic as it gets, cabbage, I just chopped up four heads
2 packs of pig tails, one pack was smoked
Some salt and pepper
Little bit of water
Let cook until the cabbage cooks down to your liking

Just made mine today, I love it. Just the way my grandmother used to make it

I don't follow a recipe, but I start with tasso, the trinity, and cabbage and go from there. Not so much smothered as sauteed, but long enough to get some color on the cabbage, which adds some sweetness.

I cook it the exact same way I do collards/mustards. Bacon. Onion and garlic. Misc seasoning. Sauté the cabbage down and then add water and chicken base. Simmer until soft. End with a heavy splash of vinegar.

1 lb andouille cut into small pieces
1 lb Tasso, cubed
1 head cabbage, large size (chopped)
1teaspoon salt
1/4 teaspoon cayenne pepper
1/2 teaspoon black pepper
1 table spoon sugar
1 small onion

DIRECTIONS

In a large saucepan, brown meat over medium heat.
Add onion and saute for 3 minutes.
Add cabbage and cover.
Cook about 50 minutes, stirring occasionally.
Uncover and add seasonings, cook 5 minutes more.
Serve as a main dish over rice or as a side with some cornbread, of course. ;).

Why are y’all adding water? Salting the cabbage should yield plenty of liquid.

Andouille and cabbage and creole seasoning.

Brown your andouille, add your seasoned cabbage and smother it all together for an hour or so.

Did this one last year and I thought it was great.

Emeril's Favorite Cabbage

Ingredients
1/2 pound bacon, coarsely chopped
4 cups thinly sliced onions
1 1/4 teaspoons salt
1/4 teaspoon cayenne pepper
3/4 teaspoon freshly ground black pepper
1/2 teaspoon sugar
3 bay leaves
1 head green or white cabbage (about 3 1/2 pounds), cored and thinly sliced
1 (12-ounce) bottle beer

Directions
Cook the bacon in a large, heavy pot or Dutch oven over medium-high heat, until browned and slightly crispy, about 5 minutes. Add the onions, salt, cayenne, black pepper, sugar, and bay leaves. Cook, stirring, until the onions are soft, about 5 minutes. Add the cabbage and stir to mix well. Cook, stirring, until the cabbage just begins to wilt or soften, 3 to 4 minutes. Reduce the heat to medium-low, and add the beer. Stir to mix.

Cover and simmer, stirring occasionally, for 1 hour. Remove the bay leaves. Remove from the heat and serve warm.

Fry 3 or 4 pieces of salt pork.
Toss in cabbage.
Add a little water...salt & pepper
Cover to smother/braise/steam.

Made this last night. All I had was kilbasa so I had to spice it up a bit. Delicious, easy, and low carb. Thanks.
