Sausage for poboys

What is your favorite local sausage for poboys? If the company ships nationwide all the better as I am in Colorado. I prefer hot sausage. Used to love the sandwiches at Muffeletta's in BTR, I am sure that is gone now.

You talking link or patty? Patton's is pretty much the standard when it comes to patty hot sausage and as they are in many grocery stores, I imagine it could ship. Vaucresson ships link sausage and they also are the standard for po boys.

Either or, although reading about the Pattons hot it has my mouth watering lol. A friend also mentioned Vaucressons

Patton's hot sausage patty's are sold in frozen tubs at Winn Dixie, in Mandeville. I am sure they are sold in other local's, as well.

And, Patton's hot sausage patty's are the answer you are looking for. Don't forget you need the crusty french bread and commercial sized tubs of blue plate mayo!

Back in the day, when you ordered a hot sausage poboy or hot sausage and crackers in a BR bar you would get a link of Bright Red Sausage, sliced into rounds for the hot sausage and crackers, or sliced lengthwise for the poboys. This was a standard for any of the bars around lsu. The sausage was made in Donaldsonville and is still available under the brand name "Branded Hot Links" made by Manda Packing Co. I usually buy it at Walmart, but I have seen it at other grocery stores.

The "Pattons" sausage was more of a NO sausage and not readily available in BR, but that was years ago. I have seen it in the frozen food case at Rouse's. For BR style I still go to the Bright Red Hot Sausage.

RIP GENE's

Drove from my apartment in NO to Nashville one day with 5 of those poboys in the back seat. Smell lasted about 2 weeks.

Yep like these. I buy these locally and are delicious to me as a hot sausage poboy.

Correct, BR hot sausage poboys have always been red hots. Place on North Blvd near I10 use to be great (Romano’s?).

Red hots use a dyed red casing and almost always cheaper meat such as: pork hearts, beef hearts, beef tongue, chicken, turkey, etc. They have always been made for a less expensive option than a straight pork sausage.
