Sauce for smoked chuck roast UPDATED with meat pics

Having a get together and smoking a chuck roast for dinner. It's usually standing/patio socializing so like to serve my proteins in sandwich for for ease and would like to do a sauce to compliment the smoke roast on bread.

I'm between a peppercorn sauce or horseradish sauce. Anyone have a thought as to which will compliment better and/or have solid recipes you've used on either?

Someone sguggested that to me earlier, but I personally hate chimichurri. Based on how much I'm getting this I may make one for guests and one of the above sauces listed as well

If you’re doing sliced roast (like roast beef or pit beef from eye of round), serve horseradish. Horseradish also goes great when served on buns.

If you’re doing chunky slices (like brisket or pot roast), I’d prefer another sauce.

Since you said serve with bread, I wouldn’t go chimichurri.

But I love the idea of 2 sauces if they are grabbing their own meat and bread. Let them choose.

For fun, here’s some info:

Last time I did this, I cooked Baltimore Pit Beef using eight (5 pound) eye of rounds for 70 sandwiches with thin sliced onions and onion buns.

Cooked at 250 over charcoal and wood chunks for 2 hours to 135 degrees. Let it rest 30 minutes, the temp got to 144. Then I sliced thin on a meat slicer.

My horseradish sauce recipe was:
2 (32 ounce) jars mayo
32 oz horseradish
1/3 cup lemon juice
Garlic minced
Salt and black pepper

No. 5 Sauce

1 cup ketchup
1/2 cup cider vinegar
1/3 cup brown sugar
1 tablespoon Worcestershire sauce
1 tablespoon rub

Options: hot sauces, chili powders, molasses, etc.

Simmer to marry the flavors and thicken as desired.

Good BBQ sauce. Simple, but most people are amazed you made it yourself.

This stuff is incredible on anything smoked.

I keep 2-3 jars in the pantry and one in the fridge at all times. Always a hit
My smoker gets used a lot.

This is one I use, could drink it straight it’s so good
Horseradish Cream Sauce
1/2 C heavy cream
1/2 C sour cream
1/2 C horseradish
2T minced chives
1T fresh squeezed lemon juice
Pinch of salt and fresh ground pepper
Make it couple hours before use, keeps up to a week but never lasts that long

Damn that's a lot. Mine is similar, but I like sour cream in there as well.

And I was gonna say a tomatillo salsa would pair well.

It was for 40 pounds of meat which made 70 half-pound sandwiches.
