I had a lobster roll recently, and while it was delicious, I think it would have been better on poboy bread all dressed up.

Any other traditional sandwiches you think would be good as poboys?

Good French bread, not the hard crunchy stuff.

Why would you cover up all that delicious lobster meat with lettuce and tomato?

I've had a BLT poboy and I had the Frenchuletta, which is Liuzzas muffuletta poboy. Guillory's here in Metairie makes a hot tamale poboy with cheese and chili.

Away from LA, almost everyone screws up the poboy - especially the bread. Sometimes Vietnamese places make bahn mi sandwiches with bread that is close, but there is something magical about a simple dressed poboy.

Shortstop once sold a soft-shell crawfish poboy.
