so Afro my main question is what are the food costs to make a standard 2-toppings pizza @ Domino's vs. Mellow Mushroom. educated guesses welcome.

I'm basing my $2 average price for a pie on the fact that dough = flour and water (flour is cheap .. water is free) .. sauce = tomatoes + water + spices (again, not expensive) .. toppings = meat and cheese .. that's the bulk of your cost but if you're buying smartly and from cheap a wholesale distributor it can't be very much per pie.

Even then, the disagreement was never about the exact cost. It was always about the difference in overhead between Dominos type place and Mellow.

So Rohan, do you eat pizza at all? Do you think that a "high end" pizza place that sells a pizza for the same price point as MM has that much costlier ingredients?

Not more costly enough to warrant the subsequent increase in cost of the pizza to the consumer. At least not based on ingredients alone. But I understand they have to factor in rent, utilities, staff, etc. to the upcharge. That's all fine and dandy, that's the cost of doing business. What I'm saying is that the higher quality ingredients still don't result in a final product that is worth what they unfortunately have to charge to turn the profit they want .. at least not to me. I can get a better pizza for cheaper at other places.

Actually, for a "gourmet" two topping pizza $2 is close. 10 years ago our variable cost for a cheese + pep was about $1.40/pie. Sell price in many places can't factor in fixed costs(rent/mortgage etc) because most guests don't care what your rent is and expect to pay a certain price(or close to it) on a product.
