What are you babbling about? I said that it costs them about $2 to make a pizza. You think that is ludicrous or grossly off-base? Prove it if so. I think it's a pretty fair assumption.

Wait. Did you do some google research and talk to people in the industry or not?

I think he is trying to say he is very confident in his assumptions.

May have received his info from this.

It is dated 07 but it lends credence to his supposition.

It is largely irrelevant, the mark up is high at all pizzerias. I would suggest eating at the good ones. Ancora, Dominca, PD(never been), and if you're strolling on Oak, maybe MM.

$2.85 twenty years ago does not equal $2 today. And like you said...that really isn't the point.

nikinik, my wife would agree with you on many things MM and your review. The crust is her fave, the Esperanza salad dressing is equally good on the Greek salad, and the dining experience is consistently good at most MM locations here in ATL, where MM began. Beer choice can vary by location, most are rather limited for beer snobs. I don't see how anyone compares a MM pizza, say with pepperoni, sundried tomatoes and artichoke hearts with anything from Domino's, not even in the same ball park and if you don't like the cost eat somewhere else. My favorite pizza here is Antico, cooked in stone ovens built in Naples, it is other worldly and not cheap like Domino's, either, yet represents good value and high quality yet I would never eat there due to very hot interior and lack of space. St. Angelo's also has a very good quasi-deep dish pizza I like, thicker than hand tossed, less deep than a true Chicago version and crust is excellent.

quote:

Good point, but with that location being new, and each location being independently owned, then I think a review is helpful. For instance, it's good to know they have balcony/outdoor dining at that location.

A lot of MM franchisees own multiple locations and quality and service can vary somewhat. It can cost up to $3M to open a MM, I don't see them selling $10 large pizzas ever.

PS - I like Carrabbas better than some uppity Italian places around ATL for middle of the road types of fare. The pasta is made in-house, and the Past Sostanza with added shrimp is very good.

The guy in that thread said it cost him $2.85 " thirteen years ago "

So it's 19-20 years ago. It's 2013 here though.

do people think it costs $10 for a restaurant to make a pizza or something? despite trying to curtail the argument by focusing on one tiny aspect of the discussion (the $2 food cost I proposed) .. it's hard far anyone to argue that pizza joints aren't operating at a huge profit margin .. and I refuse to pay that much of a markup on something I don't find worth the money. much the same way high end steak houses don't really interest me. perhaps there's something at this Mellow Mushroom that adds extra value to their prices .. atmosphere? service? I'll check it out for myself so I can put a period on the run-on sentence that is this thread.

ETA: this is one of the google results I found

quote:

4. Pizza
Do you know how you can tell that a particular item, food or drink, has a high markup? Because it's always on sale. When I think of things always on sale, two come to mind: pizza and mattresses. We'll save the mattress talk for later.

Think about the core ingredients that go into a pizza. First, there's dough. Do you know what goes into dough? Mostly it's water and flour. Let's see, water is basically free and flour costs pennies. Minimal amounts of yeast, salt and sugar and there you go. Next, pizza sauce. Even the most dressed-up, fresh homemade sauces are not that expensive; it's just tomatoes, water and spices. Cheese and toppings, while costlier, still add a substantial markup.

Some cursory research on the subject gave me these rough figures. A medium pizza from any one of The Big Three chains costs about $2.60 to make. That comes to 25 cents for the dough, $2 for the cheese, and 35 cents for the sauce. Even if you go all the way up to a large with everything, you're looking at a cost of about $4 to $4.50. Compare these to the retail pricing, and you're basically getting robbed!

Does that answer my question?

High markups are everywhere. Why are you trying to single out pizza?

His first post here was to poo poo the OP for reviewing a Caesar salad at Mellow Mushroom on Oak. This despite the fact that he doesn't eat Caesar Salad and has never been to said Mellow Mushroom.

Now he's fixated on profit margins of pizza joints as if food cost is the only cost associated with selling pizza. It's the only fool proof business venture in America. Just open a pizza place and profit $12 a pizza.

Not to mention he is completely fixated on the cost now, like that was the issue at hand. He's just completely missing the point, and it's really funny. He thinks he's so smart.
