Are you comparing equal sized pizzas when you make this claim? I'm thinking you aren't.

Actually, for a "gourmet" two topping pizza $2 is close. 10 years ago our variable cost for a cheese + pep was about $1.40/pie.

Thanks, that what I figured to be true because $2, while not always right on the penny, seemed to be the magic number I always heard or read associated with pizza cost.

Wow.. finally another person with a brain up in here!

Well then how do places like Mellow stay in business if what you say above is the case? Wouldn't everyone just be buying the cheaper product?

Your delusion of being correct here is laughable.

That is all!

Mellow Mushroom sells $25 pizzas. Is there a more expensive pizza in town? I don't think so.
Do better pizzerias exist in town? Yes.

Probably because they can offset their pizza profits with beer and alcohol sales, where chain delivery places cannot.

It's simple, you pay a higher rent because you expect a higher volume. It's hard to increase your margins by raising menu price too much without people going elsewhere.

Or it is because they can and do charge more for their pizza compared to Dominos etc?

Only R2R is claiming it is too much. I think if Mellow's prices were too high, people wouldn't be buying their pizza. Clearly people are buying their pizza though.

For an equally topped and sized pizza, there probably is.

You may want to clarify that you're talking about R2R. He might think you're talking about me.

I feel like this argument on pricing models needs a detailed explanation from start to finish.

wonder why the ones in Gainesville and Cumming, GA closed?

also .. people very well may be buying their pizzas, but they're also buying beer and sodas and caesar salads - other high profit margin items that brick and mortar restaurants use to make money they may not make on pizza-by-volume sales ... the model of Domino's, Pizza Hut, etc.

A bunch of Pizza Huts and Dominos have closed over the years too. Was that supposed make a point?

Well I guess they probably don't do any research on their pricing and are content to just lose money on their pizza then. You should consult for them so they can fix their pricing.

R2R is an idiot and did you no favors by bringing you in this. Just read the thread and you'll understand.
