My little country school had the best yeast rolls. The beef tips were always on point, and I also remember the peanut butter scoops in the little soufflé cups. Anybody have that recipe? It was peanut butter mixed with powdered sugar or whipped cream or something but it was light and fluffy and delicious.

Oh, also, the chili with rice and cornbread lunch was one that everybody ate. I remember teachers eating it when they never came to the cafeteria otherwise.

I went to school in Ruston. We always had some heavy set African American women that could throw down in their kitchens. I think my favorite was chicken spaghetti day. Those were real lunches back then versus what my kids have to eat. We had greens, lima beans, peas, okra, green beans, jazzed up corn, outstanding homemade yeast rolls, cornbread, etc. It made me grow to appreciate vegetables that ny mother did not cook. What sucks is I know a lot of the poor kids that was the best meal they were going to get that day and the cafeteria lady made sure they got a heavy handed portion. Sounds odd but their chicken and dressing was to die for. Those are days long gone by the wayside and a totally different era.

I grew up in 70s/80s and I never understood the trope of terrible school food. I always enjoyed most lunches. Everything was always fresh and made from scratch. From what I understand now, it’s all processed and reheated.

Those yeast rolls will never be topped. I will die remembering the smell of that bread baking on the day I walked into school for my first day of kindergarten.

My favorites:

Roast beef & gravy over rice
Square pizza
Spaghetti
Lasagna
Peanut Butter cake

At St. Thomas More back in the day, they used to have these spicy yeast rolls that were amazing.

The biggest thing I remember as a kid about school lunch was we had a salad bar. I was one of the few kids that actually made a full salad and enjoyed it, but mostly it was the school made ranch dressing. All the ingredients were cut in house, housemade dressings, croutons, bacon bits, the whole 9 was done in-house.

Most of the girls would make an almost soupy concoction of croutons, bacon bits and ranch....I never understood this.

We basically had toaster ovens to warm the frozen garbage. We had the small round pizza, soybean burger and a real greasy burrito. The greasy burrito was a little tasty but would give you a belly ache by 2 and a run for the toilet. I saw a kid eat the burrito and drink milk. He pushed back from the table stand up and had a huge barf on the floor of the cafeteria.

ours too, my kids school has a great Thanksgiving meal. I think they still do a pretty good job. Still got those great yeast rolls.

My favorite was always beef tips over mashed potato

If you played football you got extra portion and two milks.

^^^this. and in the catholic school I went to moms were the nurses on duty they would wear a uniform. if you didn't feel good it was like having mom as you laid down.

The best part was the milk in the bag, but once I got to high school they brought food like chicfila in which was awesome

I remember being so jealous of my older sister (no pics) because she went to St. Michael (Formerly Bishop) and their lunch choices were like Pizza Hut, Chic Fil A and Subway.

I get to high school and while I enjoyed Mama Lou's (lunch lady)'s food, I would of much rather Chic Fil A as a high schooler.

Ya it was great. Best part was if you forgot to pre order and brought your own lunch you could still get extras, if they ran out there was always Chicfila sauce to make that plain arse sandwich a little better
