Red Beans and Rice

Just want any and all ideas from everyone..looked at a few recipes and everything seems kinda basic..thanks in advance.(after the jambalaya help I figured I’d get rbr advice as well)

Watch but know...if you throw everything in at once and cook for 50 minutes...it will turn out the same.

It is a very basic dish

Soak beans overnight
Brown sausage and removed
dump seasoned trinity in and cook down some getting the sausage mess all scraped up
add beans
add water to your first knuckle above the beans
add a few bay leafs
cook for about 1.5 hours
add sausage for last 30 minutes
smash some beans in the pot before eating to thicken up

Add a little fresh jalapeño pepper, minced.

Use green onion and parsley at the end.

A smoked ham hock or two can’t be beat for adding flavor.


Mash a cup or two of the beans and stir back in during the last 15 minutes of cooking.

I always cook the sausage in the oven..I just don't like the sausage grease. I use bacon grease to cook the vegetables and any ham seasoning.

More or less how I do it. I like to start with bacon grease first tho. I cook some no nitrate added type bacon during the week in the oven and save the grease.

I also add some smoked ham hocks in. I hard sear them first in the bacon grease. Then sausage...then add trinity. Once thats cooked down I add the hocks back in along with the beans and water. Simmer and work the lid and the water content to get it where I want it. Meat falls off the ham hock and ill clean that up as it does. Skim excess oil as it cooks.

I was thinking about taking the sausage out after browning and put back at the end to keep some flavor in them. Also thought about trying some better than bullion pork flavor to cut with the water.

MD, I wish you wouldn't promote the ridiculousness that was in that original post. There is no Natchitoches vs New Orleans style red beans.

The recipe that original poster gave had a whole bottle of Tabasco in it and he described New Orleans Red Beans as "slop".

In NOLA, you can get thick beans or thin beans, made with a dozen different seasoning meats, from salt pork to sausage to ham hocks to tasso to andouille to pickled pork to ham bone to ham chunks.

I always soak the red beans overnight in water with a couple of tablespoons of salt dissolved in the water. This helps break down the outer skin and makes for a more creamer texture. This tip came from America Test Kitchen.

Also Tom Fitzmorris suggests adding additional finely chopped celery to the pot. I tried this and it works good. Here's his recipe for red beans.

Austin Leslie and Buster Holmes put a cup of tomato sauce in their beans. I tried it and it adds a nice, unidentifiable flavor.
