I will occasionally use in any recipe that cals for sausage.

I like to smother some cabbage with andouille, a wonderful easy dish. Add a little butter at the end and a dash of nutmeg.

At a restaurant I once had a mixed grill of 2/3 lamb chops and 1/3 andouille. The andouille had been cut into 1/2" coins then quartered. The lamb picked up just the right amount of flavor. I do the same with steak, making sure the juices mix.

I make a single pan main dish with andouille, onions, peppers, tomatoes and chopped new potatoes. Like a goulash. Add whatever herbs and spices you like.

Shrimp and Tasso Alfredo Pasta.

Also:
Chicken, Green Onion Smoked Sausage, Pork Andouille and Tasso Gumbo!

I have eaten a dirty rice that had very small shaved pieces in it. That was very good.
