Recipe for taco meat seasoning

I’ve gotten into a taco craving and want to season the meat like good Tex-Mex places.
The packaged stuff doesn’t taste anything like those.
I know this is a lame request but it’s Saturday and the alternative is to work.

I'd start with some ancho chili pepper, cumin and Accent (MSG)

1 part garlic powder
1 part cumin
1 part salt
1 part chili powder
1 part paprika
1/2 part oregano
This is my go-to taco seasoning. Don’t know if it’s considered texmex but it’s significantly better than any packaged mix

What are you considering a part in your mix? Tablespoon?

Depends on how big a batch you’re making.
1 part could be 1 teaspoon. Just use equal amounts of the first five ingredients and 1/2 teaspoon of the sixth for a small batch.
For a larger batch the measured amount could be a tablespoon. Just so you use equal part of the first five and 1/2 of the sixth.
Could use 1 cup, just so the measurements are equal.
Really depends how much you want to make. Make a lot and save for later.

Not sure if this is the flavor profile you want, but I use this. Makes 6 tbsps. Use 2 tbsps plus 1/2 c water per 1 lb ground meat.
2 tbsp Chili powder
1 tbsp Cumin
1 tbsp Sea salt
1/2 tbsp Black pepper
1/2 tbsp Smoked paprika
1 tsp Dried oregano
1 tsp Garlic powder
1/2 tsp Onion powder
1/4 tsp Cayenne pepper
2 tbsp Chili powder
1 tbsp Cumin
1 tbsp Sea salt
1/2 tbsp Black pepper
1/2 tbsp Smoked paprika
1 tsp Dried oregano
1 tsp Garlic powder
1/2 tsp Onion powder
1/4 tsp Cayenne pepper

any combination of cumin, dried chili product and salt/pepper will get you 90% of the way there

This is a really good Mexican seasoning.
It's light on salt though so you may have to add more.
1 tbsp chipotle chili powder
1 tbsp garlic powder
1 tbsp onion powder
1/2 tbsp crushed red pepper flakes
1/2 tbsp dried oregano
2 tbsp smoked paprika
1 1/2 tbsp ground cumin
1/2 tbsp salt
1/2 tbsp black pepper
1/4 tbsp ground cinnamon
1/4 tbsp ground cloves
I think you'll like this.
The cinnamon and clove are important but don't over add these.

my favorite thing is to mix refried beans and taco meat together (along with the seasonings).
It holds in the crispy taco shell, and doesn't fall all over the place. Another added benefit is that it will make the broken pieces of shell, stick to it.

my wife adds chopped potatoes as it’s cooking.
it’s pretty good and adds a textural component

This is what you need:
Taco Tico Meat
1 pound hamburger
1 cup water
1/3 cup oatmeal, briefly pulsed in the coffee grinder
2 T butter
1 t chili powder
1/4 t pepper
1/8th t MSG
1 t onion salt
1/2 t garlic salt
1/4 t ground cumin
1/2 t salt
1 t vinegar
To get the meat into really fine particles, put water and meat in the bottom of a skillet and stir up using a fork and a potato masher. Keep going until it is really well broken up. Next add the rest of the ingredients and brown the meat. As you simmer it the meat will get a little soupy.
Keep simmering, uncovered, until the meat is nice and thick.
Enjoy it in tacos or burritos or sanchos!

quote:I usually make it in a batch, so my part is cup. When I use the season on like ground beef/turkey, I probably use 1.5 tbsp per pound of meat.

The poster ahead had it right. The best taco meat is when you make a pound of ground with your favorite taco seasoning and then brown a tube of chorizo and add it to the beef. It is magic
