Not a big fan of pastalaya, I like my "laya" with rice as God intended it. I will say that what you have created there looks nothing like the pastalaya I have seen/eaten, it looks more like chicken & sausage with sauce over noodles. I'd probably eat it but the whole "2 cans of soup" thing kinda makes it more of a pasta & sauce dish. Not bad for something quick & easy.

French Onion Soup is basically beef broth with floating onions....... no big deal. The cream of ________ has been used forever in cooking.

Friend of mine made some stuffed bell peppers for me some years ago. They were delicious, so I asked for the recipe. It included one can of Cream of Golden Mushroom Soup. I'd have never guessed that in a million years.
I don't eat any of those soups and I rarely, if ever, use them, but when they're cooked into a dish, if the dish is prepared well and has other flavors, with the soup not being the star, I don't know how you would know.
There's a place in the world for those soups just like Velveeta. Maybe not too many places, but there's a place.
I had a crawfish dish over rice, also, that was very good. Asked for the recipe. Came from the Crawfish Cookbook out of New Roads, I think. Has a can of cream of mushroom or maybe it was cream of celery and a lot of butter. I've made it for a crowd. They go nuts over the stuff. I'd have never guessed in a million years the soup was in it and I generally turn my nose up at recipes with those soups. Historically, the old recipes using those don't taste very good.I remember that growing up. This did, though. It has a LOT of butter and chopped veggies. I was shocked that the soup was an ingredient.
Those are the only two recipes I can think of with the cream of soup. Pretty sure they suck in the healthy department, though.

Ok, so I did 1lb sausage, 2 chicken breasts, and 1lb pork. Cut out two cans of water and only added one. Used rotini instead of spaghetti. Also cut cooking time down considerably once the pasta was added. Conclusion: sodium level very high, but will do for a quick dinner.
