LSU Agcenter's aquaculture professor Dr. Ray McClain says this:

I use bleach on mine. I find that they get really clean that way.

In my experience when using salt, the veins in the tails tend to be cleaner, I don't know if its technically crap, but I would assume it is some sort of waste product. Where I am from the cleanest crawfish around come from a place called Hawks. He has his own ponds and I want to say he purges them in stages for like 2-3 days.

I didn't know the exact times, but a buddy of mine in high school grew up across the street from all of his ponds and just a little ways from the restaurant. I haven't had a chance to go back in years, but I saw his purging system, it was pretty elaborate for crawfish....

If any of you are in Lafayette, there are 2 places to try. 1st and foremost go to Crawfish time off of Ambassador Caffery and damn I can't think of the road for whatever reason, I have been in Ms. too damn long. Its the road b/w Walmart and the old Kmart. 2nd go to Dwight's on Johnston, he is just hard to beat.....

All I know is if you get your crawfish in the NOLA area you need to almost scrub them individually.. I dont know where ther generally get them from but I have never had remotely clean crawfish I have bought for a boil there.

It's Ridge Road and they do have pretty good crawfish.

I give each individual crawfish an enema. Some of them like it, some don't. It's a long process, but allows for more beer consumption.

Also I lived in South Louisiana all my life. I've had "good" crawfish. I just don't think the positives outweigh the negatives.

The "purging" process is just a step used to give time to stand there next to the ice chest/bucket, holding a hose and finish off a beer. Just like the whole boiling process...It would be a lot quicker and less work to just buy boiled bugs, but then you miss that whole time you have to drink a few while waiting.

fwiw purging is for panzies. If you know the person they're coming from well enough to know he at least picked the trash out just empty the sack in the pot.

I've always heard that regular tap water has enough chemicals in the water to purge them and salt will kill more than is needed.
