Jambalaya is the most overrated Louisiana food to me. The process of cooking it and the amount of people it will feed is great. The food itself is just ok.

Yep. I'd grab a good bowl of red/white beans with sausage, tasso, etc over jambalaya every single time.

You're going to get a ton of shite for your OP, but I agree. Red beans and rice is simply a stubborn leftover from a time in which making a dish that required very little attention was a Monday necessity.

$9+tax at The Chimes, being that's one place mentioned earlier in this thread. I've seen it higher; I've seen it lower. But, that's generally about what I've seen for a full meal portion.

If you are paying that much for a single portion, you're doing it wrong. Make it at home for a fraction of the cost per person

I'm not paying that much. I don't make it at home, because in the time spent cooking it, I could have cooked any number of dishes I would enjoy far more

Here is a much better (estimated) calculation of cost
For 6 portions:
Beans = $1.90
Smoked Meat = $3.50
Trinity = $1.00
Seasonings = $0.03
Rice = $0.40
Total food cost = $6.83
Power cost calculation:
1500 watts for 2.5 hrs @ $0.10/kWh
Total Power Cost Electricity = $0.38
