This thread made me hungry for steak. While I love the HEB Prime cuts, my treck home was better for me to pick up choice from Whole Foods, which feels like a waste of money. But alas. Here we go.

Maybe my eyes are playing tricks on me but the steak in the 3rd picture looks like a rabbit.

Seeing as this summer has been hotter than the Devil's a-hole, I've had to pivot from my usual grilling method when it comes to steak.

I've found myself cutting steaks into large bite size pieces and seasoning them.

Get a cast iron pan screaming hot on the stove top and sear each bite on both sides for about 30 seconds each until they get the Maillard reaction.

Rare on the inside, super crust on the outside.

All without melting outside from the Sun.

I just reverse sear mostly, less time spent over the fire until the sear

I usually do, too, but my outdoor kitchen faces the West. It's boiling outside until the Sun finally goes down. That's around 8 o'clock at this time of the year.

am i the only person who wants to crawl up the wall when a gorgeous steak is cut into slivers?

if my wife does that i want to kick kittens.

leave my steak alone! i want each slice to be made seconds before it goes into my mouth so each bite is juicy and warm.
