Just saw the internal temp was at 145, told them to take it out and rest. My mother-in-law, says no, I cook it to 175!! How the frick do I tell her to google that shite and learn not to burn the meat. WTF.

And yes, I would Facebook this shite if I wasn’t friends with her on there.

PS - at least it was thawed.

Old people always want to dry out meat. 145 is plenty and you'll actually be able to chew it.

That’s too high. It will be dry. If anything cook to 155 and let it rest. It will keep cooking to 160

Tell her that the parasites people really worried about in pork are actually killed off around 137 degrees. And everything in the process is a lot better handled these days than when she was your age.

This comes from the US government: 145 degrees

Also, overcooked pork is the worst meat there is.

It's gonna be really bad.

If you had to talk her into taking it out at 170, just give up and let her cook it to 175 it is already way past being saved, and she will make herself sick and blame you for making her eat "raw" pork

For a lean Pork Loin, 145 is perfect. She is probably thinking like a fattier piece, like a roast or butt.

It's not worth the argument. Your wife already knows you're right.

My MIL is like that. Over cooks everything. Any meat is really dry no moisture left in it at all. Gave her a couple of flounders and she baked them at 350 for 1 1/2 hrs to make sure they were cooked. FIL been eating that shite for 60 yrs.

You don't... you can't...
It is impossible to undue generations of cooking malpractice simply by referencing the internet. I just cook it how i like it and let them slice off a few pieces to microwave to death.

I like to sous vide mine for 2-3 decades and then put them on the launch pad of a space shuttle to finish them off. Not sure what the internal temp gets to, but the char is worth it
