Pork Tenderloin Ideas

Looking for ideas for PT. I am getting bored of the same ole way of baking in the oven covered with pesto or smothered in red gravy of stuffing it with some sort of sausage. Many years ago Vega Tapas had a moorish pork plate that I still can taste. Please throw me some ideas for PT. Thx

I like to drizzle some olive oil over them, season with some salt, pepper, garlic powder and I favor sweet basil and oregano for my dry herbs. I'll put it in the fridge for several hours and crank up the grill and cook it to medium, that way the meat is very tender and not dried out.

If anything is left over, my wife likes to have me thin slice it across the grain and she puts it on a tortilla and adds sour cream, finely chopped green onions, thin sliced lettuce, diced tomatoes and a Tex/Mex cheese blend.

Stuff it with apple pie filling and wrap it in bacon. Throw it in the smoker on 275 until your desired temp is reached.

If you keep the tenderloin whole then your options are the methods you've described in your post. You can season, possibly stuff, and bake/grill.

If you break down the tenderloin in smaller pieces then you can make cutlets, or cube it up and use in lieu of other pork cuts.

Slice in medallions, egg wash and either Italian bread crumbs or Oak Grove chicken fry. Get some Zea's Sweet Chili sauce to dip.

A soy or teriyaki marinade for an hour or two, then roast hot & fast. Or look up char siu marinade, it involves five spice powder, soy, honey, etc...for a BBQ chinese pork flavor.

I like to do a porchetta-style rub: crushed fennel seeds, garlic, rosemary, oregano, parsley, etc. Coat the tenderloin w/oil, press in the seasoning rub, roast at 425 for 15-20 mins, until internal temp is 145-155 (depending on how done you like your pork). You can wrap it in proscuitto, which will make a crispy shell on the outside.

I'm lazy, I usually just oil & coat w/a BBQ rub, & then roast.

I didn't make my own, but we had a bottle of Korean BBQ simmering sauce that we had leftover from one of the meal deals at Fresh Market. I marinated a pork tenderloin in that last week, put a good bit of black pepper on it before throwing it the oven while giving my kid a bath. It was pretty good for not having to do much at all

I'm not big on marinating, in general, but the Trader Joe's Island Soyaki is darn tasty on pork.

This weekend I butterflied a pork loin and seasoned well, then stuffed with a mixture of smoked boudin from Ronnie’s and shredded pepper jack cheese. I basted with melted butter and baked, basting with more butter halfway through.

Took the pan dripping/butter mixture and simmered with a jar of pepper jelly. Topped the finished product with remaining boudin and spooned the pepper jelly/pan dripping mixture on top.

The only change I would make is I think I'd prefer to sear the meat before roasting.

Another good idea. I do this several times a year and make about 20 of them at a time, 10 with the tenderloin and 10 with chunks of chicken breast.

I'll marinade the two meats in separate containers with the same seasoning blend of salt, pepper, garlic powder, soy sauce and some Worcestershire sauce. Comes out great when pared with onion, bell pepper, yellow squash, zucchini, mushrooms and some large cherry tomatoes on the skewers.

Marinade with balsamic vinegar, soy/tamari, and dijon mustard. Add in fresh rosemary and garlic.

Sous vide (leave marinade in the bag).

Sear on grill or under broiler.

If no sous vide, roast low and slow to five degrees under desired temp, then follow searing instructions above.

I've always been a big fan of chili/lime pepper seasoning on pork tenderloin. The last few times I've done it I rubbed in mustard, coated in a chili lime pepper seasoning mix (like this), sous vide until done and then sear w/a torch or on a white hot grill.

I make pork steaks with it. Slice the loin into thirds and pound it to about 1” thickness. Coat with olive oil and bbq rub with a little Chinese 5 spice added to it. Grill to medium then glaze with a mix of 50:50 bbq sauce and hoisin sauce. Really good with some stir fry or a Thai peanut salad.
