Pickled some eggs today

I put some eggs to pickle today. Two half gallon jars of beets and eggs and one jar with jalapenos. I decided since the beet ones were red to make the jalapeno ones green in keeping with the holiday spirit.
Also, prepped and ready to put some burgers on the Keg in a little while so I'm having a little egg nog & whiskey cocktail with fresh grated nutmeg.

Love pickled eggs and pickled sausage. I have a few jars of them in the pantry. Seems like a good day to break one out and have a few as I watch the games on this, so far, dreary day.
They look good, and I've also used beets to color the eggs.

I think I’d love pickled eggs, but I’ve never once boiled eggs and thought “I wish I could do some more work before eating these”.

My number 1 tip for pickled eggs:
Buy small eggs. They are easier to eat when pickled.
Also holds true for deviled eggs.
