Photo of my first attempt at Red Beans & Rice

Can you judge them based on a pic?

I think it came out well, tasted good. I had some for leftovers yesterday and today for lunch.

Thanks for all the advice I got in my thread last Friday. I put in half a stick of butter in the end. Threw in a ham hock. I might add more hot sauce and cayenne next time to make it spicier.

Also I cooked a pound of bacon which yieled about a half cup of bacon drippings, unfortunately the measuring cup I put the drippings in, the drippings burned a hole through the bottom so I lost a lot of it. I salvaged about 1/6 of a cup of drippings.

It looks a bit liquidy for my taste. I prefer mine to be more Natchitoches-style.

Cut up a 1 lb of andouille and fry it up. Add about half a container of chopped seasonings and cook until soft and transparent (about 7-8 minutes). Dump a few cans of Blue Runner Red Beans (I like half regular and half spicy). Probably about 2 of the large cans.

Throw in a pinch of cayenne and two bay leaves. Let simmer on stove top for about 20-25 minutes, stirring occasionally.

Awesome beans, every time.

Take the serving spoon and silverware out for better picture. And wipe the rim of the bowl and pot.

I'd eat the beans.

I cooked the rice separately and put it in a separate container. I have been experimenting with the rice ratio. I agree its better with more beans less rice

Looks more like a 5 quart pot.

But the beans look pretty good.

One tip...try using a "red bean" as opposed to a "kidney bean". There's a difference, though I'm sure the kidney beans were good.
