Pan Seared Chicken Thighs

How do y'all do it? Bone in, skin on (removed later)
This is my go-to healthy meal when I want something that tastes good and is still pretty damn healthy.
I usually just sear them over medium high heat in a cast iron skillet with a tablespoon of oil with the skin on, skin side down for a couple minutes, then flip.
Put in a 400+ oven, until they are 185. Got some in there now.

They both offer positives, but dark meat offers more negatives.

And about 40 more calories.
It's not as healthy as breasts, but don't act like it's terrible.
They are very similar. And the taste is off the charts better with thighs.

I take the skin off, season it up, spread it out, and pop that shite in the oven at 350 to start.
Then, I season up my thighs, bone in, and throw 'em in a cast iron skillet over medium heat Until cooked through.
About the time the batch is done, my skin is ready to come out of the oven. It's crispy as can be and I munch on it while I eat the thigh.

Cook some on parchment paper in the oven. Season as you like. Fantastic.

I do this except I make it a little more unhealthy by sauteeing onion and garlic in the pot after the chicken is removed (and I sear the chicken with a light dusting of flour), deglazing with wine and broth and herbs.. and then putting in the oven to cook in the juices.. and pop on the stove at the end for a little extra reducing to make the pan gravy thicker.
Probably not AS healthy, but can't be that horrible either. Especially if you're using homemade stock.

That doesn't sound unhealthy at all.
The flour is the only "unhealthy" thing in there and it's not much.
And flour isn't really that bad for you.

I just read an article about that last night, I believe. I love crispy chicken skin a whole lot more than chicken meat, which I don't like much.

Well in that case, I highly suggest. Braised chicken thighs are great.
