Not like the Lobster deal at all. Chef Rifko is great and does zoom videos live to teach shucking and recipes for sauces. Navy Cove should be back harvesting next weekend. All the rains have us saturated in fresh water. Need some South winds and Salt!

We should be back online next weekend. Hoping for a Thursday harvest unless Mother Nature throws us a curve ball. I’ll post on my SM once we know for sure.

I have eaten oysters at some of those high end places across the country that say they are offering good oysters from all these different places.
I have yet to eat an oyster better than an oyster from South Louisiana. I would not pay a premium simply because an oyster was from some other place.

It just depends for me. Gulf oysters are certainly the most plump and awesome with extra hot cocktail sauce on a cracker. But the delicate ones like Beausoleil oysters are great on their own with a splash of mignonette.

Different tastes. I prefer delicate, briny oysters from northern climates. Gulf oysters are too warm and meaty tasting for me. They’re the fast food of the oyster world.

I got a whole box of Navy Cove during quarantine from them for like $100 for 100 oysters. They are legit. $90 for 3 doz sounds a bit high.

36 for $65 as the Chef’s Special, shipping included, When they are available at this location. Otherwise, you can order them from their supplier on the coast for a good deal, similar to the price noted in your post. That’s what I did several times over the last year.

At Navy Cove, even though we are in Ft Morgan, AL we are all LSU guys and appreciate the support! We will be starting tours back on the farm this summer if anyone is interested in learning oyster aquaculture and slurping some down right on the farm. I’ll provide the libations for TD members.

Sorry to hijack...does anyone know if Grand Isle Oysters (Grand Isle Sea Farm) recovered from Zeta or will be opening back up? I was ordering from them all of 2020 until Zeta hit and wiped them out....

They should be coming back online soon. They are also experiencing the same problems we are in Mobile Bay with all the fresh water heading South. Need to get that South wind blowing some salt into the marshes and bays.

Just finished serving a tasting of the fine oysters from OystersXO and decided to do a little review of the service.
Order was place on Tuesday May 4th for delivery Friday May 7th. Oysters actually arrived Thursday May 6th.
I purchased these as a surprise for my wife for Mother's Day and just so happened to get home before she did. The surprise could have been ruined by the lack of attention to detail but, nevertheless, fate was on my side. Next time I will use the comment field to ensure that the oysters are delivered exactly when they are supposed to be. The box was clearly marked and distinguishable.
Inside the box was a packing slip that contained pertinent details but lacked a pack date. There was only a date to ship. You cans also see a harvest time, an internal temperature protocol, temp @ delivery, and ship time. It also reflected the quantity and description of the oysters contained within the box.
The box was lined with insulated reflective thermal wrap.
I ordered 3 DZ Hama Hama oysters so you can image my surprise when I saw three color coded bags. More on that later. Inside the thermal barrier was a plastic bag containing the oysters. There were two ice packs below the bag providing temperature control.
I took a surface temperature which was 57°F. Then I opened each bag and counted the contents. There were 14 in the white bag, 12 in the orange, and 12 in the blue. I noticed a hollow sounding oyster as I counted the white bag and observed an oyster with a hole in it so I used a probe to take an internal temperature which read 46°F. Shell fish can be received at an internal temperature no higher than 50°F as long as they are cooled to 41°F or below in 4 hours.
Each bag also contained a shellstock tag that has information on it like, company name, address, and phone number, shellfish name, harvest date, and harvest location. These are used in the event of a foodborne illness outbreak caused by the consumption of these oysters. Restaurants are required to keep them on file for 90 days after the last shellfish is served. I tied a little piece of the bag to each to identify the different variety of oysters. I also used the bag as netting to separate the oysters to allow them to fit in the container better.
I place a little rack in the bottom of the container to elevate the oysters above any water that may accumulate from melted ice.
Ice packed on top.
The overall quality of these oysters in impeccable. I am very satisfied with the quality and service. Would recommend this company to any oyster enthusiast.
I'll do a tasting review a little later. Time to go enjoy some oysters!
