If you don’t mind, what is the name of your farm/company? We will be down that way mid June for vacation, and a tour of an oyster farm sounds like something my dad and I would enjoy.

ETA: never mind, I see that it is “Navy Cove Oysters”.

Fuh-nom-min-all

Thanks for the source.

The best of the bunch were the Blue Pool. They were cocktail in shell size but had a deceptively deep cup that retained a significant amount of liquor.

The aroma was vegetal with a natural melon sweetness.

We discovered that if you sipped the liquor then ate the oyster, the perceived natural sweetness teetered on cucumber, melon, and celery seed.

Overall, the value far exceeded my expectations.

Would recommend.

I’ve ordered the “chef’s choice” twice...fantastic value each time. And you can add extra orders of a dozen to your initial order at the cheap price.

I have yet to eat an oyster better than an oyster from South Louisiana. I would not pay a premium simply because an oyster was from some other place.
my cousin is an oysterman in the Chesapeake bay with huge triploids.

Deep shelled and perfect creek brine to them.

I’m partial but damn they’re good.

I wish North & South Carolina would allow the oystermen to set up shop in every estuary. They’ve cleaned the Chesapeake pretty well.

Well, Mr. Balls, you've flung a cravin' on me. I'll order a few for the weekend myself. I'm hoping the Chef's Choice are the Navy Cove's.
