Here is a little secret, you can make oyster dressing with cornbread rather than stale bread.

I came looking for the same. I've never had it but my dad's grandparents used to make it and he swears it was the best thing he used to eat at thanksgiving. For some reason he's never made it. My wife and kids don't like oysters so if I were to ever try it, it'd have to be at my folks house.

If I had to eat at a strangers house, I take cornbread dressing 10 out of 10.
If I had to eat down South at a relatives, I prob go 50/50.
If I am at my families and we have the version there....oyster 10 out of 10 times. Not a doubt. One of my favorite foods much less dressing choice.

corn bread dressing is good and all, but it doesnt hold a candle to a good oyster dressing.
a bad oyster dressing is a fast candidate to "scoop it under the table for the dog".

We make them both and I love them both but my favorite is oyster. More of a unique Louisiana thing.

we only make it with stale french bread, seasonings and oyster! Never ground meat!

I put ground meat in mine because that is the way my Grandmother used to do it and she made the best.

My grand dad always made oyster dressing, I’ve been looking for a recipe to make for Christmas as a tribute to him. Will probably try this.

Same here. The rest of the family doesn't like oysters. I've been making it in a small round casserole dish for myself for the last 15 years or so. Fresh raw oysters is the only way for me. I have friends that use those canned smoked oysters and that stuff tastes nasty.

In fairness to the other guys comment, only people from South Louisiana know or care that all people from SLA aren’t Cajun.

We make oyster dressing w cast iron cornbread instead of stale bread/crumbs. It’s excellent. Superior imo.

My wife is from Georgia, after her 1st Thanksgiving with my family she saw that she needed to drop her "oysters are yucky" bit and become a more sophisticated eater. She learned to make oyster dressing, thanks to Richard Collins, and now my in-laws prefer it over cornbread.
