The "leathered" or matte finished granite is the way to go outside. I have had both (shiny and matte) and I much, much prefer the matte finish as it hides the dust/pollen much better than the shiny granite.

Except for when you get black like I did
shows all the dirt. I have my cleaning lady hit it up twice a month tho so its not too too bad.

ahhhh...yeah, that was probably not one of your better decisions. I'm sure it looks cool when it is clean, but pollen on the black...

I have an outdoor kitchen area that is connected to my home. I have a grill against a solid wall with a hood exhaust vent over it. The hood is rated for outdoor use and has 2 blowers capable of moving 1200 CFM. I thought that this would be enough power to handle the smoke from the grill…but I was wrong. I have smoke that escapes the hood and makes its way to the peak of the ceiling (vaulted ceiling). From there, it seeps between the boards ultimately making its way into my attic area. Obviously, this is not ideal so I want to add additional ventilation to move that smoke out of that ceiling and up through the roof. There is nothing but attic above the outdoor kitchen so I don’t have to worry about any issues routing the exhaust. My question is…who does this type of work? Would it be a roof company, an electrician or a HVAC company?

I won't have an outdoor kitchen in my patio, but I will have my Egg and a gas grill out there. My contractor talked me out of an exhaust system because it's all screened in. No attic issues because there's no attic over the ceiling. It's just wood and then a tin roof on top. It can't go from there to the attic.
Anyway, contractor said the wind/air would circulate the smoke and the exhaust might not really serve it's purpose well because of my layout. He's going to put some wall fans up that will hopefully direct the smoke through the screens above the egg and grill. It's a rig, in my opinion, but we'll see how that works. The South end is wall and the grills will be at the East end. It's a 30 foot room East to West. The fans will be pretty close and the ceiling is pretty high at that point. Probably won't work and I'll have to think of something else or go back to looking into an exhaust.
I have a very strong exhaust over my stovetop in the kitchen because it has a gas grill in the middle. I have a ceiling fan in the kitchen and I have to turn it all the way off when I grill because though it's way above the exhaust, it can cause the smoke to swirl such that it isn't sucked up into the exhaust. That was the example he gave when I was going to buy a strong exhaust for outside. My indoor exhaust will suck up a paper towel if you hold it in your hand above the stovetop.
My brother has an open patio that extends from the covered area. He has pits and egg out there. He's used a wall fan for years to blow the smoke from the pits away from the covered area of the patio. Has worked for him.

will your wall fans blow the smoke through the screen or will they pull the smoke out through the wall? If the latter...I think that should work.

The former. They will blow toward the screens as I understand it. Same way my brother's work. They blow above the pit and out. The smoke goes out into his yard and away from the patio area.

If it rains in the windows over your smoker and grill, will that be a problem?

Dunno if you did or not but put a ceiling mounted "spot" on the egg and pit.
I have a similar setup and the nite spot lite on the pits is a must
You should also have access to the island cabs from the pool side. Lotsa wasted useable under counter space

I have 6 canned lights and 2 overhead lights that are almost directly over Primo and grill. Should be enough lighting. I hope.

Appreciate the kind words. Would have loved to save $20K, however that is why I am still out on the road working.
