Personally...no to okra.

Unless i am making a shrimp and okra gumbo...then I like all that slime.

It seems like more and more folks do this nowadays, and I don't get it either.

As for okra, I never used to make it with it, but lately, I've started to use a little. I cook it down so much, it's almost hard to tell it's there. But, I like the texture it adds, along with the subtle bit of flavor it provides.

I like okra in seafood gumbo.
I don't like okra in a chicken and andouille gumbo.

OK, this is how this works...If gumbo has okra in it, it is Creole gumbo. If gumbo does not have have okra in it...it is cajun gumbo...unless it is "okra gumbo." Creole gumbo also MAY have tomatos. Cajun gumbo NEVER has tomatos.

If you want to make creole gumbo...put okra in the pot. If you want to make cajun gumbo, do not put okra in the pot. Both are good. I prefer cajun gumbo...that's what I grew up on.

Of course you have to have okra in seafood gumbo. But, that being said, gumbo, although the name comes from the African word for okra, has become to be defined so loosely, you can put anything you want in it.

Bozo's in Metairie makes an excellent gumbo without a roux. I have made gumbo with a slurry using oven browned flour. The best gumbo I ever had was made with andouille and wild geese.

The only thing that grosses me out is these people who put a scoop of potato salad in the middle of the bowl of gumbo.

Strictly Cajun Gumbo for me..absolutely NO okra and NO tomato under any circumstances. Ruins any gumbo.

Yeah, my mom always makes potato salad whenever she makes gumbo and I never even understood why they went together at the same meal (you already have rice), much less in the same bowl!

my mom does this as well; i'm equally perplexed by the practice. it never even occurs to me to make potato salad when i make a gumbo.

Potato salad is THE side dish to have with gumbo. Putting the potato salad in the bowl of gumbo is an individual practice of some folks...probably not really all that many. Potato salad is THE side dish with gumbo because...well...gee, the two dishes taste good together! The rice in the gumbo is not an issue...its part of the gumbo once its in the bowl. The potato salad is on the side...for most folks. If you've never had gumbo with a side of potato salad...well gee...try it! Betcha like it when you do!

It is a disturbing fact that carbs tend to go well together. Have some potato salad with good rice-n-gravy. Not good for the waste line but tasty.

And here's another one for ya...some folks put hard boiled eggs in their gumbo. Supposedly the practice comes for poor folks who could not afford the potatos for the potato salad...but had eggs...how poor is that!...so they boiled the eggs and put them in the gumbo to make up for not having the potato salad! Not making this up. Some small town MOM-N-POP eateries that serve cajun gumbo will do this.

my family does this all the time. actually, i think it has to do with not being able to afford meat for the Gumbo, not potatoes. They would put eggs in the gumbo when meat was scarce or too expensive. they would also use eggs as a substitute for meat during lent.

Well now, that could be it also. Probably some truth to both stories...depending onwhere you were and what you didn't have available.

FYI...pretty good gumbo at the King Truck Stop on Hwy. 190 just west of Port Barre. Had some last night. But they don't have potato salad!
