re: Grillades...what is the best

Posted by chud on 11/21/14 at 9:51 am to
i usually do a mix of steak tips, pork (butt or whatever is on sale), and veal stew meat.

where's all the usual turkey talk?

Posted by chud on 11/20/14 at 7:00 pm
i'm doing 3 this year - one each fried, smoked, and boiled. smoked on pecan, boiled a la the nola.com story from last week.

i used to inject my fried turkeys but gave up years ago when i determined the flavor isn't worth the effort. fried bird with good rub is good. only brined bird i ever had was by this yankee who used his portuguese grandmother's recipe, and it was hands down the worst turkey i've ever had.

haven't smoked a bird in several years, but never brined or injected birds before smoking before.

boiled is boiled. i don't see any need to do anything there.

brines? injections? worthwhile? no? go!

oh hells yeah - that market downtown has a couple of great butchers, and there is a strong tradition there. i got two brothers in columbus.

around where i live, you can't just go into a random grocery store and get good smoked sausage though.

dude said he had some and what could he do with it, not was it any good. i also live in the land of shitty smoked sausage so i feel his pain. unless i mail order it (which i often do at great expense), quite frankly the best i've found up here is safeway brand smoked sausage.

you people don't know how hard it is to live up north...
1 crawtator
2 jalapeno

i think the baby back rib one was a push from corporate - utz came out with that flavor at about the same time.

and i must say i am shocked - shocked i tell you! - at all the love for voodoo. i really wanted to like those, but i find there's a little too much dill in the mix for my taste. i can't believe how many people have that as their fave.

cut in half long ways, grill, glaze with bbq sauce. good on a po boy bun or on a plate with some tator tots.
ramen noodles
pork and beans with a shitload of chopped up pickled jalaps my aunt used to give me
it's in the same class as other high end chain steak houses, i'd say. staggering number of wines by the glass, which is cool. also the potatoes flemming are really good.

i didn't know that pillsbury french bread even existed until i got a southern living holiday cookbook and my mom and wife wanted me to make the orange roll recipe from it. recipe called for that. went ahead and bought 2 loaves. rolls were pretty good but not great, bread cooked by itself was ok. if i was gonna eat canned bread, i'd probably go for the crescent rolls.

never done popovers but for yorkshire puds you heat the oil in the pan and the batter should be cold. hope that helps.

this is hilarious. as a former british colony, there are a lot of good indian beers. ipa was invented by the british in india. rich history of beer making there.

you shouldn't be afraid of butter, but if you are just use cream instead.

re: When was the eye logo made?

Posted by chud on 12/29/12 at 7:55 am to
i've come to terms with the eye, but the whole idea was based on that shitty song and the brief moment of pop culture history around it. i thought it was totally cheesy at the time. i still don't love it, but it has outlasted the history behind it so i find it less offensive now.

re: Cookware set - advice sought?

Posted by chud on 12/28/12 at 2:52 pm to
i have a set of caphalon that i love. got about 13 years ago and no deterioration in performance at all. don't know if they still sell them, but used to could get a pretty decent kirkland set at costco that was a really good starter set.

nah, actually i was poor as shite growing up and the schwans truck didn't even come to our neighborhood. by the time i could afford them, i'd discovered good grocery stores and butcher shops and learned how to cook.

in retrospect i guess it looks like i was being a shitass, but i really just don't like frozen food.

i would actually buy ice cream off an ice cream truck, but i prefer to flag those guys down. i can't be arsed to pre-order ice cream. as such, you are welcome to my ice cream off that truck.
