You absolutely can get great bark from pellets. I just think a stick burner does it best.

I’ve seen some of his videos. Haven’t watched this one yet. Will watch. Does he get paid to push certain products?

Man pellet cookers are awesome and turn out great food. You don't have to defend them so hard. This thread is comparing them to real wood smokers. Of which they're not. Stop embarrassing yourself.

It doesn't seem like the smoke from my pellet smoker penetrates as well as from my stick burner. Probably just in my head, doesn't seem like there'd be much difference in smoke if it's from a log or from compressed wood. I use an Amazn pellet tube in addition to what's coming from the smoker. I use my pellet smoker 10x times more than the offset because of ease of use. If I had to only choose one I'd pick the pellet smoker.

I've tried using several different brands of wood pellets. Last year, I put the Royal Oak charcoal pellets in. I haven't used anything since. I find that the charcoal pellets burn cleaner, less visual smoke, but there is much more flavor gets into the meat. They also have zero dust and last way longer in storage and seem to use less when actually cooking.

I finally caved to the pressure and got a pellet grill. Well, it was a Christmas gift. I'll never stop smoking meat over charcoal, but this is a nice addition. I needed a new backyard gasser and the pellet grill will replace that.
As far as several posters talking about limited smoke I've really gotten away from heavy smoking anyway so I'm cool with the pellet. I think most people over-smoke. I want the meat gently kissed with smoke not smothered in it.

I am almost afraid to jump in but.....
This is me. Some smoke sausage so much I cannot eat it by itself. Great to add to beans, Gumbo, Jambalaya or another dish but too smoky for me.
But what the hell do I know? I run a UDS.

My nephew has an American Barbecue Systems Pit-Boss rotisserie smoker (link below) with a BBQ Guru. It’s absolutely amazing and as easy as any pellet grill I’ve ever used. He has a fan on both sides of the firebox. I plan to incorporate one into an outdoor kitchen sometime in the next couple of years.

I loved offset smoking. It was fun and joyful but once I kept getting older started having a bunch of kids, I decided I wanted something easy.
I like that I can call/text the wife or my oldest daughter and have them turn the smoker on or have them check my temperature gauge and it not be a big deal.
Yes you do lose some smoke flavor but oh well.
