What's with the premium and regular designations over the last several years? That didn't exist 10 years ago. Os there much of a difference in yield per pound? Just because they are larger it doesn't necessarily mean they give more meat does it? As they grow don't the shells get more dense therefore heavier?

The bigger the crawfish the less meat they yield but people prefer them

eta; i didnt have the honor of naming it.. it has been called the mecca by all the knowledgable travelers with that food destination in mind.. No one really named it,, it just "became"... The legend continues to grow, unfortunately...We have just tried to adapt our ways to all of the attention..

Ate some boiled crawfish last night at the galley in old metairie. They were $4.99/lb. They were good but very high.
