No problem, glad they were good.

Stuffed crabs is something we haven't done just yet. Once we have our menu down we will start experimenting and making stuffed flounders, stuffed crabs, crab dip, seafood pies, etc.

We just got in some live #1 and #2 crabs. We should have some boiled ones for tommorrow.

Also: We are working on putting in about 8-10 tables (around 30-40 seats) to put in the front of our place in the front section in between the entrance and the cash register. Should take us a couple more weeks. Yet another permit we have to get. And alcohol should be another 3-4 weeks.

Edited to reflect the seating we are working on.

Some new fresh product that I have coming in tommorrow:

Fresh Whole Black Drum
Fresh Whole Red Grouper
Fresh Whole Wild-Caught (not farm raised) Sockeye Salmon
Sushi Grade Yellowfin Tuna
Fresh Norwegian Salmon Fillets
Fresh Woodsmoke Salmon Fillets (2-3#)
Fresh Pecan Smoked Trout (rainbow) 8oz Portions
1# frozen gator tail meat

Also Have the regular stuff:
Shucked oysters
Fresh Shrimp (Large & med)
#1 Live Crabs
#2 Live Crabs
Soft Shell Crabs (medium & jumbo)

***I can clean the whole fish and also the soft shells on site if needed. So I can leave the skin on if grilling or skin it if you would rather it that way. The only thing I can't do is scale fish here. Way too much of a mess to do that.***

No but thanks for asking. when I was looking at the lunch menu, it was kinda small and hard to read, then I figured out how to get it full size.

Jason, I'm curious to know if all of the 1 lb packs of crawfish tails are frozen as soon as they're packaged in the processing plants?

Chinese yes but most of the Louisiana crawfish tails no. It just really depends. They probably sell as much fresh as they can and freeze the rest. But a lot of them are put up frozen and sold throughout the year. During the crawfish season you should be able to find them fresh if you look in the right stores. Hope this helps.

Yep, just take out for right now. We plan on adding some about 8-10 tables in the front part in the next 2 weeks but we have to get another permit for that first.

In the next few months and before football season we plan on adding a room with tables and a few nice tv's and we also plan on serving alcohol.

Definitely stopping by this weekend to try the fried chicken wings and a turkey wing or two. Are the turkey wings fried? 5 chicken wings for $2.49 is cheap. Must be small.

Post this on the actual board, and you'll get a lot more responses.

Yep, turkey wings are fried. Yes they are small wings. Actually small wings cost more per pound than bigger wings because they are more popular. But if it looks like our customers prefer bigger wings, we can switch to that.

We don't have any clams or unshucked oysters today but I will definitely have some tommorrow. The unshucked oysters come in a 100ct sack. I can get clams if you need them for tommorrow. Didn't know there was that many people in Baton Rouge that like them.
